I wonder if there is an issue with one of the secondary nodes, particularly as this is an intermittent issue and also affecting 5GHz connectivity.
First check if the firmware on each node is update. If all are on the latest firmware, try turning off one of the secondary nodes to see whether the issue continues, then repeat for the other node.
The issue with dropping 5GHz could be from interference. From what I'm aware of, devices using 5GHz Wi-Fi are required to switch channel or turn off the 5GHz channel if using a fixed channel (the Tendas use channel 40) when they detect radar activity on the channel, such as airport or weather radar signals. If you use any a 5GHz video sender, this could be the culprit.
